Life has gotten to be really busy around here lately. I have been filling in at our main office since February because a couple of girls have been out on medical leave. I was asked a couple weeks ago if I would stay and take over one of the positions. Not exactly what I was expecting but I agreed. This position is not what I am used to and will be a huge change for me. I will miss my old office terribly, it is much more laid back than this one. Also, my husband, who was on his third lay off has taken on a new job. This job has him away from home for long hours six days a week. So I pretty much have become a single mom six days a week. This has been a huge adjustment for me and dinner time has really suffered. I really depended on him to help out with dinner during the week. So I am trying to pull out more crockpot recipes to give me a helping hand. I also really need to plan ahead better. It has been a huge adjustment and I know I will get in a better routine soon. Soccer is almost over for our son so I will not have to worry about games and practice. I know something else will just take its place.
The recipe I am sharing with you today is a crockpot recipe. I originally got this recipe from Cooking for your Family board and it instantly became a favorite. I have made this several times for my daughters birthday parties. I love the fact I can make a great meal but not stand in the kitchen all day preparing it before a party. You can put this in the crockpot the day before and place it back in the crockpot to stay warm while you enjoy your guests. I do not have as many photos as I had to take my daughter to urgent care on the evening I placed this in the crockpot. I was thankful I had this at home to finish and resisted the urge to stop at a fast food place. Lets get to this easy recipe......
(pork roast, chicken broth, barbecue sauce)
Place the pork roast in the crockpot and pour the can of chicken broth over the roast. I then season with salt and pepper, onions, Ms. Dash or any seasoning I want to grab. Cook on low 8 to 10 hours. I then remove the roast, drain the liquid, and separate the pork from the fat. I place the pork back in the crockpot and use forks (or fingers) to pull the pork. Pour barbecue sauce over the pulled pork and stir. I usually place the crockpot back on high just long enough to heat it up. Place on a bun and serve any way you like it. I always prefer something cheesy, Macaroni and Cheese or Becky's Hashbrown Casserole would be really good with this. I hope you get to try this recipe soon and enjoy as much as my family does.

Crockpot Pork Barbecue
seasonings of your choice
Place roast in the crockpot, pour chicken broth over roast and add salt, pepper, onions, and any seasonings your prefer. Cook on low 8 to 10 hours. Pull the pork and place back into the crockpot. Pour barbecue sauce over the pork and cook on high long enough to reheat or place on low for a gathering. Serve on buns or any way you prefer.
