Oven Roasted Potatoes



Fourth of July weekend my husband had to work.  He was home on that Friday so we decided to have our own little cookout with just our little family.  We had decided to grill chicken on the grill but I had no idea of what else to fix.  I had a bag of potatoes, but no clue of what to do.  I decided to cube those potatoes up and roast them.  Just kinda winged it here and oh my did they turn out good.  I will for sure make these again.  I pulled out the tablecloth and set up the picnic table.  This was one of those evenings that I will cherish.  Each one of us enjoyed this evening so much, even my 15 year old said it was a good day, that is a rare thing. 

I did take a few pictures but they honestly looked the same.  Its just cubed potatoes with seasoning.  Anyway, I cubed these potatoes, skins and all, seasoned with salt, pepper, and Mrs. Dash Table Blend.  Olive oil would have been great in these but that is not something I normally have on hand so I just used a little vegetable oil.  Stirred that all up in a bowl and just put on a baking sheet in a 350 degree oven until they were browned.  These were awesome and a nice change from the normal sides we have.  This will go on our make again list.  Enjoy!

Oven Roasted Potatoes

4-6 medium to small potatoes
tablespoon or two of vegetable oil
salt
pepper
Mrs. Dash Table Blend or any other favorite seasoning

Cube potatoes, sprinkle with seasoning and mix with oil.  Place on baking sheet in 350 degree oven until browned. Enjoy!

  2. My best memories are those with family and good food...sounds like you had it all! I know that those potatoes were good..chunky, seasoned, and roasted :)
