Mint Brownies And A Very Special Day!


One year ago today I started on this amazing journey with all of you.  I have had so much fun doing it too.  My very first blog post was my "famous" macaroni and cheese that I always make for our family functions.  It is so good that I have quite a few family members that have learned it and make it now too.  So I knew that had to be my first blog post.  I wanted everything to be just perfect.  I worked on that post for a while to make sure it was right. I remember the excitement when I finally hit publish post. I was just so excited to have just one person to read my blog.  I now have had over 20,000 pageviews since my first post and almost 900 following my facebook page.  You have no idea just how exciting that is for little ole me! I have learned so much and grown so much since that first post. 

These brownies could not be any easier than what I am going to share with you today. I have made these a few times and the first time was perfect, the second time, not so much! 




Unwrap a good amount of peppermint patties.  I had the small ones so this did take quite a bit of a family size bag of them. Trust me you want to use good quality ingredients like peppermint patties. The second time I made these I bought a cheaper version and did not have as many as needed and they did not turn out anything like they were supposed to.  My advice is to slurge for the good stuff.



Bake brownies according to package directions for a 9x13 recipe.  A couple minutes before they are done, take out the pan of brownies and line the peppermint patties on top.  Place back in the oven for about 3 mins or so for them to soften. 



Take out of the oven and take a spoon and spread the peppermint patties over the pan of brownies.  Allow to cool and there you go.  Once the candy hardens back up it creates a layer of goodness over these brownies. I told you these would be easy, didn't I?  I decided to add a little minty color to these and melted a square of almond bark and added green gel food coloring. I then drizzled over the brownies. If you love mint these are for you.






Mint Brownies

1 box of brownie mix
eggs, oil and water called for on box of brownie mix
A good amount of peppermint patties

Mix brownie mix according to directions on the box. Bake in the oven a few minutes shy of when they will be done and remove from oven and line with peppermint patties.  Place back in the oven for 3-5 minutes. Remove from oven and swirl the candy over the top. Allow to cool, enjoy.
